Ham and Potato Soup in the Instant Pot

This recipe comes from Clean Monday Meals and she has an Instagram Story Highlight to watch her make it in the instant pot.  It is super easy and so delicious that it became a favorite the first time we made it.  She also has an e-book and I am meaning to try more of her recipes.  She has some dietary limitations so it is interesting to watch her adapt recipes and they always look so tasty too.  I especially want to try to make her banana, peanut butter drizzled creations, but I am digressing from the topic at hand.

A couple notes I learned when making the Ham and Potato Soup:

• The instant pot's crock pot function is a little off when it comes to potatoes (regular and sweet potatoes both have come out under-cooked) so the first time I made this we had some tough potatoes in the final bowl.  We ate it anyway and still enjoyed it so that is a testament to how great this recipe really is.  I have since done some research and learned that temperatures on the instant pot do not correlate exactly to the crock pot so next time I do a crock pot recipe I will use the high setting.  However, the second time I made this recipe I just did the instant pot version from the highlights videos and it turned out so easy and great that I will only do the instant pot in the future.

• We like to add more ham to our recipe.  My husband is a protein fanatic so we could easily double the ham ingredient and he would be happy with that.

• The mashing of some of the potatoes really does make for a creamy texture in the final soup and arranging in the pot the way she shoes helps you to mash the right section efficiently.  I didn't even have a potato masher and had to borrow one from a neighbor.  I think the first time I used my meat chopper but it just was not as accurate and easy as a true old-school manual potato masher, which reminds me to add one to my next Amazon order!  I went with this one that stores flat and is made of silicone and will be ok for non-stick pans.
