Instant Pot Peanut Chicken Satay
Several months ago I put together a batch of freezer meals to have on hand for last minute dinner needs. I made a few repeats that I knew would be good but I also put in a couple new recipes. I guess you could say it was an audition if they could hang with my current collection of freezer meals. I think I tried out my first go with these bag holders too that meal prep session, but it was so long ago at this point my mom brain doesn't remember much of the prep part. I am not even sure if this meal was made with chicken breasts or thighs, but I am wandering now. Anyway, Over at Happy Money Saver I found a unique recipe that sounded right up our alley. We love peanut butter and chicken both and serving over rice sounds perfect. I prepped it and left it to sit in the freezer until the time came when we needed it. Last night it was between this or another chicken meal in the freezer but when jostling it around, I accidentally ripped the ziplock bag so this was the chosen meal. I forgot to include cooking instructions on the bag so I decided to do the instant pot and figured over-cooking it would be better than under. I also couldn't remember if I used cubed chicken or whole pieces so I ended up doing high pressure 25 minutes with a quick release. It turned out great and still juicy so I don't think it was overdone. The same time I started the instant pot, I made 3 cups of rice in my mini rice cooker and maxed it out. I found a bag of frozen broccoli and I microwaved and seasoned it with salt and pepper.
Impressions-
Initially I thought it might be a touch spicy for the 4 year old so I made her a couple fried eggs to eat with the rice and broccoli. I am not sure why now I thought it was spicy as my husband did not think so and I am usually the one to push the limit on her tolerance (which is pretty good for 4 year old typically.) All I can think now is after dealing with a sick baby all day I didn't want any chance for more whining so I just made her the eggs preemptively. Well, it made more for us parents anyway so that was fantastic since we loved it! It could maybe use some more salt next time is my only change and I would make a bigger batch for leftovers. I don't know how I prepped it since it was so long ago but I would say it only made about 4 adult portions, not 6. We would have welcomed more leftovers for lunch. It has reheated the next day just fine and I will definitely make again- especially as a freezer meal.
