Lamb Lettuce Cups and Szechuan Style Green Beans
This recipe from Cook Smarts was a winner in our house last night! The 4 year old had the filling with extra steamed rice we had from the chicken satay meal and she still wanted to try her own lettuce cup. She is not quite 4 so I knew giving her a lettuce wrap would be a touch situation to keep it together and she tried her best. That's how appealing they looked I guess that she wanted one too. Unfortunately, I forgot to pull off some green beans before adding my sauce to them and they were too spicy for the little ones but fantastic for the spice-loving adults. I would definitely add those tasty green beans to my regular rotation but remember to take some out of the pan for the kids.
The lamb lettuce cups were also enjoyable topped with toasted pine nuts but I did need to add some salt for serving and I would drain the oils from the meat next time off the pan. It was a relatively low-carb, satisfying dinner last night and we have a small amount of leftovers for lunch today. I used regular iceberg lettuce cut into cups but I did see some romaine lettuce boats at the store I might buy next time.
